LESSON 5: BAKING & DECORATING
Raw Proof-and-Bake Doughs
Raw yeast doughs can include breads, rolls, Danish, croissants, and more. Most require overnight prep, proof, and bake. These items need more labor, space and training. But customization can be provided as well as products unique to a single store and/or chain. Many manufacturers who produce bread/roll doughs will also offer basic training.
Ready to Bake/Freezer to Oven
Ready to Bake (RTB) or Freezer to Oven (FTO) items including croissants, turnovers, cookies, etc., are becoming increasingly popular. Most require 30 minutes to an hour of thaw time before baking, but do NOT all require overnight prep or extended proof time. RTB or FTO offer faster production time, saving in labor cost.
Parbaked Breads (Brown and Serve)
Parbaked Breads are baked by the manufacturer until they’re about 90 percent done and then flash frozen. Products benefit from a “refresh bake” 10-25 minutes (depending on size of loaf) at 385-400°F to crisp the crust and warm through. Allow to cool for at least 20 minutes before placing in a bag to prevent condensation from forming in the bag.
Muffin Batter Scoop and Bake/ Pre-Deposited Muffin (PDM)
Muffin batters can provide a fresh-baked, in-house program with minimal labor. Scoop-and-bake batters ship frozen in tubs from 9-35 count, ready to use once the product is thawed. Scoop and bake allows for customization as any size muffin, muffin loaf, etc., can be produced with the same batter.
PDMs are frozen in a puck form, 2-6 oz. depending on manufacturer. These require muffin tins that match the size of the frozen pucks for baking. Some manufacturers will provide pans as part of their program.
Decorating/Finishing
Decorating can be as elaborate as making wedding cakes, or as simple as topping bulk cheesecakes with a berry or a chocolate garnish. Tony’s Fine Foods has components to support in-store decorating and finishing, including cake layers, cupcakes, icings, bulk cheesecakes, tart shells and fillings. Most manufacturers who produce components will also provide basic training and decorating ideas.
Bulk Baked
If labor is an issue, take advantage of all the amazing thaw-and-sell bakery items available. Cakes, cookies, breads, and donuts are often available in bulk formats. Easy to use, they can be sold bulk or packaged in-house.
