LESSON 7: MERCHANDISING SERVICE/SELF-SERVICE CASES

Did you know that most people buy with their eyes? Colors, shapes and heights can create a “wow” effect in your Service Deli when you merchandise in creative ways.

Salad (behind the glass)

Create a landscaping effect by using colors, shapes and height when you plan the layout of the case.

  • Maximize your space by using bowls and platters placed at varying heights.
  • Colors or patterned bowls can accent the food that is displayed.
  • Use different colors such as fresh-cut vegetables to garnish the food.
  • Don’t overdo it. Add just enough to catch the customers’ eye!

Entrees (behind the glass)

Create a designated area to devote at least 4-6 feet in the case to focus on the entrees or your signature in-house items.

  • Lay out your platters in the case, using different shapes, heights and elevation, maximizing the space. If you have a quiche, for example, you could use a cake stand to display it.

Panini/Specialty Sandwiches (behind the glass) -- Section Optional

Create a section behind the glass of at least 4 feet or more to focus on paninis (if you have a grill), specialty wraps, sandwiches, or breakfast sandwiches.

  • Create a designated space for the customer to find freshly made paninis, wraps, and specialty sandwiches that are made daily.
  • Use height and elevation by using a staggered landscaping effect. 

It is crucial that every item has a sign indicating not only price but ingredients, and allergens if space permits. Or, a book of ingredients should be kept for easy access for the employees as well as a customer with questions.

Self Service Case/Grab & Go

This area should be merchandised into categories keeping like items 
together. The most important thing is for every item to have a sign. 
Use a channel strip sign for this area.

  • Retail Dips, Spreads, Olives, etc., on a shelf
  • Meals to Go, Entrees, Etc.
  • Salads, Soup, Sandwiches, Etc.
  • Pizza, Family-sized option on Ribs, Etc.
